What an easy soup to make! It really hits the spot on a cold chilly day. I really love to make a huge pot of soup and freeze it in individual containers. I like to have lots of soups on hand in the freezer during the colder months.
Sure beats having to cook all day and it's perfect when your feeling a little down and out.
This soup is full of delicious beef and beans, what a great combination. I really like to add barley instead of orzo sometimes. I love barley soup and it gives it a thicker consistency.
Grandma used to make this soup when I was a child and loaded it up with oyster crackers. Oh the fond memories I have of that soup! Now I make it all the time.

Just when you thought you had the best Italian Minestrone then this one comes along to kick it up a notch! This soup is rich with beef broth, tomatoes and delicious beans that are throughout the entire recipes. Italian Beef and Bean Soup Recipe
:
1 pound of cubed beef ( I use sirloin, london broil or beef stew meat, cut into small cubes)
28 ounce can of petite tomatoes or 6 plum tomatoes chopped fine
1 cup green beans
3 cups canned or fresh cooked navy beans
4 cloves minced garlic
olive oil around 3 tablepoons
8 cups of water
1 teaspoon each oregano, basil, granulated garlic,
parsley
1 cup sliced carrots
1 stalk finely diced celery
grated cheese I used Romano and Parmesan blended

Optional: red pepper flakes and 3 cups fresh spinach leaves
1 cup cooked macaroni / pastine of choice to package instructions ( I used Orzo)
In a large sauce pot, saute the beef in the olive oil for around 5 minutes stirring. Add the garlic, saute for 1 minute.

Add the 8 cups of water into the large soup pot. Add everything else in the pot and simmer on low for around 1 hour and a half. Cook the orzo separately and add the the pot last.
Serve topped with grated cheese.
