When I am making this recipe it reminds me of a stir fry in flavors. These pork medallions are thin and cook up very quickly. They are so tender they'll cut with a fork! This dinner comes together so quick and easy. I love the mandarin orange flavors with pork and adding the soy sauce gives it a bit of a rich Asian flavor. The sweetness compliments the pork perfectly.

I always make either my two ingredient jasmine rice or fried rice as a side dish. You can make any kind you like. This is delicious also on top of a stir fry vegetable medley.

Mandarin Orange Pork

instructions:

Mandarin Orange Pork
2 cups mandarin oranges with juice if using fresh add 1 cup water to the fresh oranges
1 large bell pepper julienne cut
5 or 6 boneless pork chops medallions or a pork tenderloin cut in rounds
(if you prefer to substitute chicken or even steak they both go great with this dish as well.)
2 cloves finely minced garlic, salt, pepper, cayenne pepper and dried parsley)
1/4 cup soy sauce 1/4 cup water mixed together
1/3 cup light or dark brown sugar
1 tablespoon canola or sesame oil if you have it
Optional: my fried rice recipe or white or brown rice cooked to package instructions ( jasmine rice is wonderful also with this dish)
Heat a frying pan with around 1/4 canola oil.
Once  the oil is heated place  the pork in the oil and fry until golden brown on both sides.

Add the peppers, garlic, brown sugar, oranges with juice, season to taste. Saute around 10 to 12 minutes on low heat.
In a bowl mix 2 tablespoons of cornstarch and 3 tablespoons of water to make it thin
Place that mixture into the mixture in the pan, add water if too thick or more cornstarch if not thick enough, if will thicken as it cooks.
Cook on low cook until fork tender when testing. Takes around 20 minutes on low heat. Sauce will thicken add water if gets too thick.
In the meantime make your rice to package instructions.
Place the cooked rice in a baking dish, add the mandarin pork mixture on top.
