I have been adapting older recipes and using whole wheat flour and less sugar. These whole wheat blueberry scones came out great unless you are a sugar fanatic but scones aren't sweet to begin with. These are tender and great with morning coffee or a cup a tea. I think as an afternoon snack they would awesome.

Whole Wheat Blueberry Scone Recipe
ingredients:
- 2 cups whole wheat flour1 stick butter which equals half a cup2 tablespoons sugar ( use stevia or splenda around 2 teaspoons for lower carbs)1 egg yolk ( save egg white for brushing the tops)3/4 cup buttermilk ( you can substitute any milk or heavy cream with 1 tablespoons vinegar added let it sit 10 minutes)2 teaspoons baking powder1 teaspoon baking soda
Any fresh diced fruits or dried fruits can be used, (around 1/2 cup) for the tops. I have used blueberry, raspberry, apricots, peaches, apples and mango. They all work out great!
Optional: sprinkle tops with granulated sugar and cinnamon after brushed with leftover egg white.instructions:
- Place the dry ingredients in a bowl and add the butter using a pastry blender or fork to blend. Add the buttermilk and egg yolk until the dough is formed. Roll out cut into triangular wedges. ( I press in the fruit of choice on the top after I cut the wedges.) Brush with whites of egg. Sprinkle with sugar, cinnamon mixture if using.
Bake on preheated panggangan 375 degrees for around 25 minutes or until the edges start to brown.
